   Sindhi Koki is one of the popular Sindhi cuisine of India. It is made by mixing wheat flour, onions, green chillies and spices. The recipe for making Sindhi Koki is as follows:

   Component:

   2 cups wheat flour

   1 onion, finely chopped

   2 green chilies, finely chopped

   1/2 tsp cumin

   1/2 tsp ajwain

   1/2 tsp salt

   1/4 tsp turmeric powder

   2 tbsp oil

   water, as needed

   ghee for cooking

 

  Instruction:


   In a large bowl, mix wheat flour, chopped onions, green chilies, cumin seeds, carom seeds, salt and turmeric powder.

  Add oil and mix everything together.

   Add water little by little to the flour and knead it until it becomes soft and smooth. The dough should not be too sticky or too hard.

   Cover the dough and keep it for 10-15 minutes.

   Divide the dough into small portions and roll each into a round and slightly thick roll.

   Heat a griddle on medium heat.

   Place the rolled koki on the tawa and cook on each side for 1-2 minutes till golden brown spots appear.

   Drizzle a little ghee over the koki and cook for a further 1-2 minutes on each side, till fully cooked and crisp.

   Repeat the process with the remaining dough halves.


   Serve hot with chutney, curd, or any other dish of your choice.
