Ingredients:


1 bunch fresh spinach leaves, washed and chopped

200g paneer, cut into small cubes

2 tbsp oil

1 tsp cumin seeds

1 onion, finely chopped

2 garlic cloves, minced

1 inch ginger, minced

1 green chilli, chopped

1/2 tsp turmeric powder

1 tsp coriander powder

1/2 tsp cumin powder

1/2 tsp garam masala powder

Salt, to taste

1/2 cup water

2 tbsp cream (optional)

Lemon juice, to taste

Instructions:


Heat oil in a pan on medium heat. Add cumin seeds and let them sizzle for a few seconds.

Add chopped onion, garlic, ginger and green chilli. Saute until the onions are translucent.

Add turmeric powder, coriander powder, cumin powder, garam masala powder and salt. Mix well and saute for a minute.

Add chopped spinach and stir well. Cover and cook for 5-7 minutes on low heat.

Once the spinach is cooked, let it cool for a few minutes and then blend it to a smooth puree.

Heat a separate pan and lightly fry the paneer cubes until golden brown. Keep aside.

Add the spinach puree back to the pan and add water to adjust the consistency. Let it come to a boil.

Add the paneer cubes and let it simmer for 2-3 minutes.

Finally, add cream and lemon juice to taste. Mix well and serve hot with naan, roti or rice.
