Ingredients:


1 cup gram flour (besan)

1/2 cup yogurt (dahi)

1/2 cup water

1 tablespoon lemon juice

1/2 teaspoon turmeric powder

1/2 teaspoon salt

1 teaspoon ginger paste

1 teaspoon green chili paste

1 teaspoon fruit salt (eno)

2 tablespoons oil

1 teaspoon mustard seeds

1 teaspoon sesame seeds

1 tablespoon chopped coriander leaves

Instructions:


In a mixing bowl, add gram flour, yogurt, water, lemon juice, turmeric powder, salt, ginger paste, and green chili paste. Mix well to make a smooth batter.

Heat a steamer or a large pot with water and bring it to a boil.

In another small bowl, add eno fruit salt and 1 tablespoon water. Mix well and add it to the batter. Mix gently and quickly. You will see bubbles forming in the batter. This is what makes dhokla fluffy and light.

Grease a dhokla plate or a cake tin with oil. Pour the batter into the greased tin and steam it for 15-20 minutes on medium flame or until a toothpick inserted comes out clean.

Once done, let it cool down for a few minutes. Then, cut it into small pieces.

In a small pan, heat oil and add mustard seeds and sesame seeds. Let them splutter. Turn off the heat and pour this tempering over the dhokla.

Garnish with chopped coriander leaves.
