Component:


2 cups whole wheat flour

2 large potatoes, boiled and mashed

1 small onion, finely chopped

2 green chilies, finely chopped

1/2 tsp cumin

1/2 tsp red chili powder

1/2 tsp coriander powder

1/4 tsp turmeric powder

salt to taste

water as required

oil or ghee for cooking


Instruction:

In a mixing bowl, add the whole wheat flour, salt and enough water and knead into a soft dough. Knead well for a few minutes, then cover and keep aside for 15-20 minutes.

In another bowl, mix mashed potatoes, onions, green chillies, cumin seeds, red chilli powder, coriander powder, turmeric powder and salt to taste.

Divide the dough into equal sized balls, and roll each ball into a small round with the help of a rolling pin. Place a spoonful of potato masala in the center of the circle.

  Bring the edges together, seal them and flatten the ball slightly with your hands. Apply a little flour to the dough and roll it.

Heat a griddle or non-stick pan on medium heat. Place the parantha on top and fry for 1-2 minutes or till the bottom surface turns light brown.

Turn the parantha over and pour a teaspoon of oil or ghee on top and spread it all around. Cook for 1-2 minutes, pressing gently with a spoon to help the paratha cook evenly.

Flip it again and repeat the same process on the other side, cook till it turns golden brown in color from both the sides.

Serve potato paratha hot with curd, pickle or chutney.
