Malai kofta recipe
Malai kofta is a delicious North Indian dish made with soft and creamy cottage cheese and potato dumplings in a rich and creamy tomato-based gravy. Here's a simple recipe for making it at home:
Ingredients for koftas:
2 cups crumbled paneer (cottage cheese)
2 medium-sized boiled potatoes, mashed
1 tsp ginger paste
1 tsp green chili paste
1 tsp garam masala powder
1/4 tsp turmeric powder
2 tbsp cornflour
Salt to taste
Oil for deep frying
Ingredients for gravy:
2 tbsp ghee or oil
1 tsp cumin seeds
1 large onion, finely chopped
1 tbsp ginger-garlic paste
2 medium-sized tomatoes, finely chopped
1/2 cup cashew nuts, soaked in water for 20-30 minutes
1 tsp red chili powder
1/2 tsp turmeric powder
1 tsp coriander powder
1/2 tsp garam masala powder
Salt to taste
1/2 cup heavy cream
2 tbsp finely chopped coriander leaves
Instructions:
To make the koftas, combine the crumbled paneer, mashed potatoes, ginger paste, green chili paste, garam masala powder, turmeric powder, cornflour, and salt in a bowl. Mix well to form a dough-like consistency.
Divide the mixture into small equal-sized balls and shape them into smooth round balls. Heat oil in a deep frying pan and deep fry the koftas till they are golden brown. Drain them on a paper towel and keep them aside.
To make the gravy, heat ghee or oil in a pan and add cumin seeds. When the seeds start to crackle, add finely chopped onions and sauté them till they turn golden brown.
Add ginger-garlic paste and sauté for a minute. Then add chopped tomatoes and cook them till they are soft and mushy.
Add soaked cashew nuts along with the water they were soaked in, and cook for a few minutes. Turn off the heat and let the mixture cool down.
Transfer the mixture to a blender and blend it into a smooth paste. Strain the mixture through a sieve and pour it back into the pan.
Add red chili powder, turmeric powder, coriander powder, garam masala powder, and salt to taste. Mix well and cook the gravy for a few minutes.
Add heavy cream and mix well. Cook the gravy for another minute or two.
Add the fried koftas to the gravy and cook for a minute or two, till the koftas are well coated with the gravy.
Garnish with finely chopped coriander leaves and serve hot with rice or naan.
