 How to make jalebi ( जलेबी कैसे बनाएं )

Jalebi is a popular Indian sweet dish that is made by deep frying a wheat flour batter in circular or pretzel-like shapes, and then soaking them in a sugar syrup. Here is a simple recipe to make jalebi at home:

Ingredients:

1 cup all-purpose flour (maida)

2 tbsp corn flour

1/4 tsp baking powder

1/2 cup yoghurt

1/2 cup water

1/4 tsp saffron strands

Oil, for deep frying

For sugar syrup:

1 1/2 cups sugar

1 cup water

1/4 tsp cardamom powder

1/2 tsp lemon juice

Instructions:

In a mixing bowl, combine the all-purpose flour, corn flour, baking powder, yoghurt, water, and saffron strands. Mix well to make a smooth batter. Cover the batter and let it rest for about 10-15 minutes.

In a separate pan, add the sugar and water and heat it over medium heat. Stir until the sugar dissolves completely. Add cardamom powder and lemon juice and stir well. Allow the syrup to boil for 5-7 minutes or until it reaches one-string consistency. Keep the sugar syrup warm.

Heat the oil in a deep frying pan over medium heat.

Pour the batter into a squeeze bottle or a piping bag with a small round tip. Squeeze the batter into the hot oil in a circular motion to form a coil or pretzel-like shape.

Fry the jalebis until they turn golden brown in color on both sides. Remove them using a slotted spoon and drain the excess oil.

Soak the fried jalebis in the warm sugar syrup for 2-3 minutes. Remove them from the syrup and serve hot.

Your homemade jalebis are ready to serve. Enjoy!
